Ingredients:
1 3/4 cups all-purpose flour
1/2 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger

1/2 cup pumpkin puree (not pumpkin pie filling)
2 large eggs
1/4 cup milk

For the cinnamon sugar coating:
1/4 cup melted butter
1/2 cup sugar
1 tsp ground cinnamon
Instructions:
Preheat the oven: Preheat your oven to 350°F (175°C) and grease a mini muffin tin or donut hole pan with cooking spray.
Mix the dry ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves (if using), and salt.
Combine the wet ingredients: In another bowl, whisk together the pumpkin puree, eggs, milk, oil, and vanilla extract until smooth.
Combine wet and dry: Gently fold the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix – a few lumps are fine.
