Ingredients

  • 1 can, 28 ounces, whole tomatoes with juice
  • 2 cans, 10 ounces each, Rotel diced tomatoes and green chilies
  • 1/4 cup chopped onion
  • 1/4 cup chopped cilantro
  • 1 clove garlic, minced
  • Juice of 1 lime
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, optional

Instructions

  1. Drain the canned whole tomatoes, saving some of the juice.
  2. Add the tomatoes to a large bowl or food processor.
  3. Add Rotel, chopped onion, cilantro, garlic, lime juice, salt, and black pepper.
  4. Stir for a chunky salsa or pulse in a food processor for a smoother salsa.
  5. Add reserved tomato juice as needed until the salsa reaches your desired consistency.
  6. Taste and adjust salt, lime juice, cilantro, or spice if needed.
  7. Cover and refrigerate for at least 30 minutes before serving.
  8. Serve with tortilla chips, tacos, nachos, grilled meats, burrito bowls, or your favorite dishes.
