  • 1 cup unsalted butter
  • ¾ cup light brown sugar, packed
  • ½ cup granulated sugar
  • 1 large egg + 2 egg yolks
  • 2 tsp vanilla bean paste
  • 2¼ cups all-purpose flour
  • 1 tsp baking soda
  • ¾ tsp sea salt
  • ¼ tsp cornstarch
  • 1¼ cups white chocolate chips
  • ¾ cup frozen raspberries
  • 2 tbsp freeze-dried raspberries, crushed

Instructions

  1. Brown butter in saucepan until nutty and golden. Cool 10 minutes.
  2. Mix cooled butter with both sugars. Add egg, yolks, and vanilla.
  3. Whisk dry ingredients separately, then fold into wet ingredients.
  4. Fold in chocolate chips, then raspberries quickly.
  5. Chill dough 30 minutes.
  6. Preheat oven to 350°F. Line baking sheets with parchment.
  7. Scoop dough into 1.5-ounce portions, space 2 inches apart.
  8. Bake 10-12 minutes until edges set but centers soft.
  9. Cool on pan 5 minutes before transferring.
