  • 600ml thickened cream
  • 2 tsp caster sugar
  • 50g sachet coconut milk powder
  • 225g can pineapple pieces in natural juice
  • 1/4 cup coconut-flavored white rum
  • 250g packet butternut snap cookies
  • Toasted flaked coconut, for serving
  • Maraschino cherries, for serving
  • Caramel syrup, for serving

Instructions

  1. Cream Preparation: Beat 1 cup of cream, 1 teaspoon sugar, and coconut milk powder until firm peaks form.
  2. Pineapple and Rum Mixture: Drain and chop half the pineapple. Combine reserved juice and rum in a bowl. Add chopped pineapple to cream mixture and fold.
  3. Assemble the Log: Spread a line of cream on a serving plate. Dip biscuits in rum mixture, sandwich with cream, and arrange upright on the plate. Cover with remaining cream.
  4. Chill: Refrigerate for 6 hours or overnight.
  5. Final Decoration: Whip remaining cream and sugar. Cover log with cream. Garnish with pineapple, coconut, cherries, and caramel syrup.
