- 2 tsp caster sugar
- 50g sachet coconut milk powder
- 225g can pineapple pieces in natural juice
- 1/4 cup coconut-flavored white rum
- 250g packet butternut snap cookies
- Toasted flaked coconut, for serving
- Maraschino cherries, for serving
- Caramel syrup, for serving
Instructions
- Cream Preparation: Beat 1 cup of cream, 1 teaspoon sugar, and coconut milk powder until firm peaks form.
- Pineapple and Rum Mixture: Drain and chop half the pineapple. Combine reserved juice and rum in a bowl. Add chopped pineapple to cream mixture and fold.
- Assemble the Log: Spread a line of cream on a serving plate. Dip biscuits in rum mixture, sandwich with cream, and arrange upright on the plate. Cover with remaining cream.
- Chill: Refrigerate for 6 hours or overnight.
- Final Decoration: Whip remaining cream and sugar. Cover log with cream. Garnish with pineapple, coconut, cherries, and caramel syrup.
