Crust:

  • 1 cup graham crackers, crushed
  • 3 tbsp butter, melted
  • 2 tbsp sugar

Cheesecake:

  • 8 oz cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1/2 tsp vanilla

Peach Topping:

  • 2 cups diced peaches (fresh or canned)
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • 1 tbsp cornstarch

Cobbler Topping:

 

  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 3 tbsp cold butter, cubed
  • Pinch of salt

Instructions

  1. Prep: Preheat oven to 325°F. Line muffin tin with paper cups.
  2. Crust: Mix graham crackers, melted butter, and sugar. Press into bottom of cups.
  3. Cheesecake: Beat cream cheese and sugar. Add egg and vanilla. Pour over crusts.
  4. Bake: 15-18 minutes until centers are almost set. Cool completely.
  5. Peach topping: Cook peaches, sugar, cinnamon, and cornstarch for 5 minutes until thickened.
  6. Cobbler topping: Mix flour, brown sugar, and salt. Cut in cold butter until crumbly.
  7. Assemble: Top cheesecakes with peach mixture, then cobbler crumbs.
  8. Final bake: 10 minutes until golden.

 

Makes: 12 cups
