This Apple Cranberry Coleslaw is a refreshing and vibrant twist on the classic coleslaw! It’s quick to make, packed with flavor, and a great way to add a pop of color to your table.

Ingredients

Scale

For the Coleslaw:

  • 4 cups shredded green cabbage
  • 1 cup shredded red cabbage (optional, for extra color)
  • 1 large apple, cored and thinly sliced (Honeycrisp or Granny Smith work well)
  • ½ cup dried cranberries
  • ¼ cup thinly sliced red onion
  • ½ cup chopped pecans or walnuts (optional, for extra crunch)

For the Dressing:

  • ½ cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • ½ tsp Dijon mustard
  • Salt and pepper, to taste

Instructions

1. Prepare the Coleslaw Ingredients

In a large mixing bowl, combine the shredded green cabbage, red cabbage (if using), apple slices, dried cranberries, red onion, and nuts (if adding). Toss gently to mix.

2. Make the Dressing

In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper until smooth and well-blended.

3. Combine the Coleslaw and Dressing

Pour the dressing over the cabbage mixture. Toss well until everything is evenly coated.

4. Chill and Serve

For the best flavor, let the coleslaw chill in the refrigerator for at least 30 minutes before serving. Give it a quick toss before serving, and adjust salt and pepper if needed.

Notes

  • Use Fresh Ingredients: Fresh cabbage and apples ensure the best texture and flavor.
  • Slice Thinly: Thinly slice the apples and onions for a more delicate bite.
  • Adjust Sweetness: Taste the dressing and adjust the honey or maple syrup to your preference.
  • Add Protein: Toss in shredded chicken or turkey for a hearty main dish salad.
